Improvised Post Ride Lunch: Oats with Vegetables, Cheese and More


Came home darn hungry from a good hop on the bike and improvised a very quick “what’s good to go in the fridge” lunch that included the last of a bag of oats mixed with some leftover vegetable broth, tomato sauce, cooked vegetables, and grated cheese.

That all then went in the microwave for about a minute and then got topped with everything you see below: a good spoon of nutty cilantro pesto (I added more later), leftover chopped onion and garlic from dinner last night (no way would I otherwise put chopped anything in tiny white cups), freshly chopped cilantro, 1/2 chopped avocado, a few sliced sun dried tomatoes, leftover chopped jalapeños (also from last night’s dinner, soaked in balsamic vinegar), and more grated cheese (you/I can never have too much). After about another minute in the microwave,…

…here’s how it turned out along with terrifically flavorful (and anti-inflammatory) ginger mint tea. All quick, all easy. Ride on!
